salmonest1These tiny buckwheat pancakes are the food of Russian royalty.

And topped with smoked salmon (or caviar if you really want to get crazy) will be a great fit for your special guests.

Here’s what you’ll need:

1 c all purpose flour, 3/4 buckwheat or whole wheat flour, 1/2 tsp salt, 1 1/4 c whole milk, 3/4 c buttermilk, 1 stick unsalted butter melted plus more for the pan, 3 large eggs separated at room temperature, 1 tbsp fresh lemon juice, 1 c Creme Fraiche or sour cream, 6 ounces slicked salmon cut into 60 strips, 2 tbsp finely sliced fresh chives.

1. To make the blini, whisk the all-purpose flour, buckwheat or wheat flour, and salt together in a large bowl. Whisk the milk, buttermilk, melted butter, egg yolks and lemon juice together in another bowl. Pour into the flour mixture and mix until smooth. Do not over mix!

2. Whip the egg whites with an electric mixer on high speed until soft peaks form. Stir about 1/4 of the egg whites into the batter to lighten the mixture. Add the remaining egg whites and fold them in.

3. Heat a skillet over medium-high heat. Grease the pan with melted butter. Using a tablespoon for each blini, spoon the batter into the skillet. Cook until the underside is browned, about 1 1/2 minutes. Turn and brown the other side, about 1 minute more. Transfer to a plate and let cool.

4. To serve, top each with a small dollop of creme fraiche, a strip of smoked salmon and a sprinkle of chives.
