Start your morning right with these delicious, easy and healthy muffins.

 

 

 

Here’s what you’ll need:

1 1/2 cup pumpkin seeds

1/4 cup raisins

1 cup whole wheat flour

3/4 cup all purpose flour

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

3/4 cup pumpkin puree

1/4 cup maple syrup

2 eggs

1/4 cup canola oil

Step 1. Preheat oven to 375 degrees and coat muffin tin with cooking spray.

Step 2. Place 1/2 cup of pumpkin seeds in food processor or in a blender. Process until it looks like powder. Add in the raisins and pulse several times until the raisins are chopped. Transfer to a bowl.

Step 3. Add in the pastry flour, all purpose flour, baking powder, baking soda, cinnamon and salt and mix with a fork. In a separate bowl combine the pumpkin puree, syrup, eggs and oil. Beat with a fork until it’s smooth.

Step 4. Add pumpkin mixture to the dry ingredients and stir until completely blended. Stir in 3/4 cups of the pumpkin seeds.

Step 5. Pour the batter into the muffin tin and scatter the remaining pumpkin seeds over the top of the batter.

Step 6. Bake for 20 minutes and set on a rack and cool for 5 minutes before serving and enjoy!
