photo444-11I love cooking but am by no means a professional chef. I rarely post recipes on here unless they pertain to entertaining and holidays but, I came across this fabulously simple and delicious Eggplant Parmesan recipe that my family absolutely loves and I want to share it with you!

ph555oto-2To accompany the Eggplant Parmesan I made these to die for and super healthy Turkey Meatballs with Fennel.

This recipe is enough for 10 large meatballs.

 

 

 

 

 

fennelHere’s what you’ll need:

3 packages Ground Turkey

1 bunch of finely chopped Fennel

1/4 finely chopped Onion

1 tsp Onion Powder

2 tsp Italian Seasoning

A pinch of Salt

 

Preheat oven to 375. Mix all of the ingredients in a large bowl then using your hands mold into balls. Place meatballs in a greased baking dish. Cover with tin foil and bake until golden brown about 25-30 minutes.

1 large can of your favorite tomato sauce. (I love Ragu with basil in it)

1 tbsp Olive Oil (optional)

1/2 tsp dried thyme (optional)

A pinch of salt & pepper (optional)
Heat up the sauce in a saucepan over low heat stirring occasionally. Pour over meatballs and enjoy!
