Serves 6. You will need:

6 1/2 inch thick pork rib chops, salt, freshly ground pepper, 6 fresh sage leaves, 6 thin slices of country ham or prosciutto, 4 eggs beaten, 1 c milk, 1 1/2 c flour, 1/2 c finely grated Parmesan cheese, oilive or canola oil.

Season the pork chops with salt and pepper. Press the sage leaf on top of each chop and then wrap with the ham slice.

Put 2 bowls next to each other. In one bowl mix the eggs and milk. In the second bowl mix the flour and the Parmesan cheese. First dip the chops into the eggy milk, then dip it into the flour and cheese.

Heat 1/2 inch of oil in a pan (cast iron works best) over medium high heat. Cook the chops a couple at a time until each side is cooked through and well browned. (about 5-6 minutes each side) Drain on paper towels and salt to taste and enjoy!
