green-beans-ay-1875505-l1This dish is not only light and fresh but is delicious and makes a perfect healthy side to offset all of the heavier dishes on Thanksgiving.

Here is what you will need:

Salt and freshly ground pepper

2 lb green beans trimmed and halved on the diagonal

5 tbsp unsalted butter

1 cup pecans

 

Bring a large pot ¾ full of water to a boil. Salt the water, add the beans, and cook until crisp-tender, 4 or 5 minutes.

Drain, transfer immediately to a bowl of ice water and let cool for 1 minute. Drain again and pat dry.

In a large frying pan over medium heat, melt the butter. Add the pecans and cook, stirring often, until the nuts are lightly browned and fragrant, about 5 minutes. Add the beans and toss to coat with butter. Add ¾ tsp salt and ½ tsp pepper, cover partially, and cook, tossing and stirring occasionally, until the beans are heated through, another 5 or 6 minutes.

Taste and adjust the seasoning with salt and pepper. Serve hot.
